My first canning session...

Last Christmas I asked for a canner and it had been waiting nearly 10 months for me to use it. I was hoping to get enough from my garden to can stuff, but alas, that didn't happen. Unless you count the hot peppers. And I don't like hot peppers! I only had the seeds because they were given to me though my husband likes them. (And I was totally screwed on bell peppers! Just a few very small ones.)


So I found a recipe online for hot pepper relish (mine does not look as pretty but my peppers were more varied and not many had turned red. *sigh* )  Because it uses vinegar, the method for canning is a hot water bath. Which is just as well for a beginner.

So here is the result. I had enough for about 13 jelly jars - but the last of it I just put in a jar in the fridge since 1. the canner only fits 12 and 2. I only had 12 jelly jars. As it turns out, it seems the yellow wax peppers bother my husband's stomach. Damn. As I said, I don't really like hot peppers but it turns out it's not really hot so I've mixed a couple spoonfuls into salsa. Not bad. It's the only way I'll be able to eat it though.

That looks like a bountiful Tam - and 13 jelly jars full is a lot! Dh used to can tomato sauce, for spaghetti - but it was so much work. He enjoyed it at the time though.
